Green Lentil Sauce

Ingredients

  • 1 cup dried green lentils, cooked in water for about 40 to 45 minutes
  • 1 large onion, peeled and chopped fine
  • 1 garlic clove, minced
  • 1 large carrot, peeled and chopped fine
  • 2 Tbsp tomato paste
  • 2 Tbsp parsley, chopped
  • 2 Tbsp olive oil
  • 2 tsp miso
  • salt and pepper to taste

Directions

  1. Cook lentils and set aside. Saute the onion in a medium sized saucepan over medium heat, until lightly browned. Add garlic and carrot, cover the pan and cook gently over low heat for 15 minutes, until they are tender. Stir in lentils and some of the cooking liquid, tomato paste, parsley. Season with salt, pepper and miso (if you think it needs a little something extra). Serve over pasta, rice or with toast.
