Eric’s Apple Galette

Ingredients

  • 4 baking apples – I used a mix of what we had in the yard
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • Zest of 1 lemon
  • 1 1/2 tbsp of cornstarch
  • 1-2 tbsp Lemon juice from the same lemon, hopefully.
  • 1 stick of unsalted butter – cold
  • 1 cup all purpose flour
  • 1 tablespoon sugar
  • 1/2 tsp salt
  • ice water

Directions

  1. 4 baking apples – I used a mix of what we had in the yard

  2. 1/2 cup brown sugar

  3. 1 tsp cinnamon

  4. Zest of 1 lemon

  5. 1 1/2 tbsp of cornstarch

  6. 1-2 tbsp Lemon juice from the same lemon, hopefully.

  7. 1 stick of unsalted butter – cold

  8. 1 cup all purpose flour

  9. 1 tablespoon sugar

  10. 1/2 tsp salt

  11. ice water

  12. Slice up the apples, remove the cores. I like to leave the skin on, its up to you.

  13. Toss apples in a bowl with the sugar, zest, lemon juice, cornstarch.

  14. Cube the stick of butter, and place in food processor.

  15. Add the flour and sugar and salt.

  16. Pulse the processor until the flour and butter have cut together. it looks kinda like lumpy cornmeal. if you’re not sure, make sure all the butter cubes have been mixed into the flour.

  17. Put this dough in to a bowl, and add ice cold water a few tablespoons at a time. mix the water into the dough until the dough can form a ball. Don’t add too much water and make the dough sticky. If you do, add some more flour to the dough.

  18. Place this dough onto some plastic wrap, shape it into a large hockey puck, and put in the freezer for 10 minutes, or the fridge for 30 minutes. The longer it is in the fridge , the better the dough gets, I think.

  19. Flour a board and roll out the dough into a rough circle 1/4″ thick.

  20. Place the pan you are going to use to bake the galette upside down on the dough, and flip the board – pan over, so the pan is now on the bottom and the board is on the top. You’ve just put the dough into the pan without making a mess.

  21. Place the apples in the center of the dough in the pan, and pull up the dough up on the sides of the apples. This is all very subjective, do what you want here. Pinch the dough to itself to keep it all together.

  22. Bake in a 375 F oven for 35-45 minutes. Check it at 30 minutes. you want the apple mixture to be bubbly and the crust to start to brown.
