Waldorf Salad

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup applesauce
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • Salad:
  • 3 or 4 crisp, firm apples
  • 2 or 3 ribs celery
  • 1 1/2 cups walnuts, in large pieces
  • Salt to taste
  • lettuce leaves (Marion suggest Butterhead or Iceberg. I also use Romaine)

Directions

  1. To make the dressing, mix together the mayonnaise, applesauce, honey and lemon juice in a small bowl. (If the honey is cold, it will help to warm it slightly before adding to the mixture)

  2. To make the salad, core the unpeeled apples and ut them into bite-sized chunks. Chop the celery into 1/2-inch chunks. Put the apples, celery, and walnuts in a large bowl and sprinkle lightly with salt. Pour the dressing over, mix well, and serve on a bed of lettuce leaves.
