Healthy Cream Soup Mix

Make your own low sodium cream soup mixes.

Ingredients

  • 2 cups nonfat dry milk powder
  • 3/4 cup cornstarch or clear gel
  • 1/4 cup instant reduced sodium chicken or beef bouillon granules
  • 1/2 tsp dried crush thyme
  • 1/2 tsp. dried crushed basil
  • 1/4 tsp. ground white or black pepper

Directions

  1. Combine ingredients. Store in an airtight container. Mix makes the equivalent of nine cans of condensed soup.

  2. To prepare as a substitute for one can of condensed cream soup in recipes:

  3. Stir together 1/2 cup dry mix and 1 1/4 cups water in a saucepan or microwave cooking dish. Cook and stir until thickened.

  4. *Cream of Mushroom Soup: Saute 1/2 cup of chopped mushrooms in a bit of olive oil and add to prepared soup

  5. *Cream of Chicken Soup: Add 1/4 cup chopped chicken to prepared soup

  6. *Cream of Broccoli Soup: Add 1/2 cup chopped cooked broccoli and 1/4 cup reduced-fat cheddar chees to prepared soup

  7. *Cream of Celery: Saute 1/2 cup diced celery in a bit of olive oil and add to prepared soup
