Oven Fried Chicken

Ingredients

  • 1 cup fat free buttermilk
  • 1/4 teaspoon ot pepper sauce
  • 4 (1/2 lb) bone in chicken breast halves, skinned
  • 2/3 cup all purpose flour
  • 1/2 teaspoon smokes paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 cup cornflake crumbs

Directions

  1. Preheat oven to 400 F. Line a small rimmed baking sheet with foil and spray with nonstick spray.

  2. Combine the buttermilk and peppersauce in a large bowl; add the chicken and turn to coat. With a fork, combine the flour, paprika, garlic powder, and salt on a sheet of wax paper. Spread the cornflake crumbs on another sheet of wax paper. Take 1 piece of chicken from the buttermilk, dip both sides into the flour, shake off excess flour, and transfer to a clean sheet of wax paper. Dip the same piece of chicken in the buttermilk again and then in the cornflake crumbs to coat. Place bone side down on the baking sheet. Repeat with remaining pieces of chicken.

  3. Spray the chicken with nonstick spray and bake until golden and cooked through, about 40 minutes.
