Black Bean Hummus

Ingredients

  • 3 garlic cloves peeled
  • 1/2 cup packed fresh cilantro leaves
  • 1 (15 oz) can of black beans, rinsed and drained
  • 1 tbsp peanut oil or other vegetable oil
  • 3 tbsp low-sugar, smooth peanut butter
  • juice from 1 to 2 limes, to taste
  • Fresh vegetables such as carrot and celery sticks of cucumber slices, optional for serving

Directions

  1. Finely chop garlic and cilantro in a food processor. Add beans, oil and peanut butter. Squeeze in juice of 1 lime. Process until beans are pureed, about 1 minute, stopping midway to scrap sides of processor bowl. Add lime juice to taste. Serve at once or refrigerate covered, for up to 3 days.
