Tomatillo Cream Sauce

Ingredients

  • 1 lb tomatillo
  • 1 jalapeno
  • 1/2 medium white onion, peeled
  • 2 cloves garlic
  • 1 tbsp kosher salt
  • 1 tbsp sugar
  • 1/4 cup chopped fresh cilantro
  • 2 cups heavy cream

Directions

  1. Preheat oven to 450 degrees. Remove and discard the husks from the tomatillos. Rinse off the sticky covering underneath. Cut out and discard the stems of the tomatillos. Remove the jalapeno stem.

  2. In a roasting pan, place tomatillos, jalapeno, onion and garlic. Roast until charred, 10 to 15 minutes.

  3. Transfer roasted vegetables to a food processor and puree until smooth. Add salt, sugar and cilantro, and process just until combined. Stir in heavy cream and set aside.
