Confetti Turkey Burgers

Ingredients

  • 3/4 pound ground skinless turkey
  • 1/2 yellow squash, finely shredded
  • 1/2 cup cooked whole grain brown rice
  • 4 sun dried tomato halves (not in oil), diced
  • 1 teaspoon Italian herb blend
  • 1/4 teaspoon pepper
  • 4 (1/2 inch thick) slices red onion
  • 2 cups baby argula
  • 4 slices fresh tomato

Directions

  1. Preheat the grill to medium-high heat.

  2. Combine the turkey, squash, rice, sun-dried tomatoes, herb blend and pepper in a bowl, tossing just until mixed. Form the mixture into 4 patties.

  3. Spray the patties and red onion with nonstick olive oil spray. Place on the grill rack and grill until internal temperature reaches 165 F, and the red onion is tender, about 5 minutes each side. Serve the burgers with the red onion, argula, and fresh tomato.
