Penne with Veggies

Short on time – use shredded carrots and a quick chop! I also used Classico Plum Tomato marinara.

Serves 5 people

Ingredients

  • 2 TBSP olive oil
  • 1 TBSP chopped fresh garlic
  • 1/2 cup chopped red onion (about 1/4th of a large)
  • 1 cup chopped carrot (about 3 medium carrots)
  • 1 cup broccoli florets, cut in half
  • 1 medium-sized yellow bell pepper, chopped
  • 1 (26 ounce) jar marinara sauce
  • 1/2 tsp salt
  • 1/8 tsp crushed red pepper
  • 1 (10 ounce) pkg fresh spinach
  • 1 (16 ounce) pkg penne pasta
  • 2 TBSP chopped fresh basil
  • 1/4 cup grated Parmesan cheese

Directions

  1. In a soup pot, heat oil over medium heat and saute garlic, onion, carrots, broccoli and yellow pepper for 5 minutes, or until soft.

  2. Stir in marinara sauce, salt, crushed red pepper and spinach; reduce heat to low and simmer 15 minutes.

  3. Meanwhile, prepare pasta according to pkg directions; drain well.

  4. Toss pasta with sauce mixture and sprinkle with basil and Parmesan cheese.
