Nutty Vegetable Loaf

Ingredients

  • 3 T vegetable oil
  • 2 cups onion, finely chopped
  • 4 eggs, slightly beaten
  • 2 t. lemon juice
  • 1 t. salt
  • 1 tsp chervil leaves, crushed
  • 1/4 tsp tarragon leaves, crushed
  • 1/4 tsp. garlic powder
  • 1/4 tsp. pepper
  • 2 cups celery, finely chopped
  • 2 cups carrots, grated
  • 1 cup green pepper, finely chopped
  • 1 cup peanuts, finely chopped
  • 1 cup wheat germ
  • 1 cup bread crumbs, fine
  • 1 cup cheddar cheese, grated
  • 1 8 oz can Tomato sauce

Directions

  1. PREHEAT oven to 350

  2. SAUTE onion in large skillet until tender.

  3. COMBINE eggs, lemon juice and seasonings in a large bowl. Stir well to blend.

  4. Add onion and all remaining ingredients except tomato sauce. Mix well.

  5. PRESS mixture into well-greased 9×5×3 loaf pan.

  6. BAKE for 55-60 minutes until knife inserted in center comes out clean.

  7. LET STAND 10-15 minutes before removing from pan. Serve hot or cold with tomato sauce, if desired.
