Broccoli casserole from Betty’s Kitchen

Ingredients

  • 16 oz chopped broccoli
  • 2 Lg eggs, well beaten
  • 2 tsp finely chopped onions
  • 1 cup mayo, reduced fat
  • 1 cup sharp cheddar cheese, fine shred
  • 1 can cream of celery
  • gr black pepper
  • 1 sleeve of Ritz crackers, crushed

Directions

  1. *Cook the broccoli according to package directions, drain.

    • Mix next 6 ingredients in a bowl (eggs through bl pepper) and mix well.
  2. **Spray an 8×11″ baking dish with canola oil, and spread the broccoli casserole in it. Spread the crushed cracker crumbs over it evenly.


  3. Bake at 350 degrees for about 30 minutes.
