Zucchini Casserole

I’ve been making this for a long time! Art found this recipe in the newspaper and brought it home for us to try. He was still working in NY then.

Serves 4 people

Ingredients

  • 2 lbs. of zucchini, sliced thin (5-6 zucchinis)
  • 1 large onion
  • 4 Tbs oil
  • 16 oz can of stewed tomatoes
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dry basil
  • 1/2 tsp oregano
  • 1/2 cup grated cheddar cheese
  • 16 oz pkg of sliced muenster cheese

Directions

  1. Saute zucchini and onion in oil until onion is soft.

  2. Use 2 qt casserole. Mix rest of ingredients. and place slices of muenster cheese over mixture.

  3. Bake uncovered at 350 degrees for 30 minutes.
