Chinese-Style Cod

Ingredients

  • 2 Tbsp. reduced sodium soy sauce
  • 2 tsp. rice vinegar
  • 1 tsp. grated peeled fresh ginger
  • 1 large scallion, thinly sliced
  • 1 pound skinless cod fillet, 1-inch thick

Directions

  1. Combine the soy sauce, rice vinegar, and ginger in a bowl. Sprinkle the white parts of the scallion slices on the bottom of a 9-inch round baking dish.

  2. Cut the cod into 4 equal pieces and place in the dish. Spoon the soy sauce mixture over the fish. Cover with plastic wrap; then prick a few holes in the plastic. Microwave on High just until the cod is opaque in the center, 5-7 minutes. Sprinkle with the remaining green parts of the scallion slices.
