Nutty Noodles

Substitute protein: 12 oz. chicken breast, 2 cups shelled edamame

Ingredients

  • 6 oz. whole wheat spaghetti
  • 10 oz. broccoli spears
  • 1 c. baby carrots
  • 1 oz. soy sauce
  • 1 T. peanut butter
  • 12 oz. tofu, cooked, cubed
  • 1 T. sweet chili paste

Directions

  1. Cook pasta according to package directions.

  2. Combine the peanut butter, soy sauce, and the sriracha in a small bowl.

  3. One minute before you drain the pasta, add the carrots and broccoli to the pot.

  4. Drain and add the pasta, vegetables, your choice of protein and sauce to the pot.

  5. Heat through and serve.

  6. Sriracha sauce substitute make from 1 c. tomato sauce, 1/4 c. brown sugar, 2 T. vinegar, 1/4 t. cinnamon, dash cloves, dash allspice, red pepper flakes.
