Dilly Beans

Ingredients

  • 2 lbs. green beans, trimmed
  • 1 t cayenne pepper
  • 4 cloves garlic
  • 4 heads dill or dry dill weed
  • 2 1/2 c water
  • 2 1/2 c vinegar
  • 1/4 c salt

Directions

  1. Pack beans, lengthwise into hot jars, leaving ¼ inch head space.

  2. To each pint add ¼ t cayenne pepper, 1 clove garlic, and 1 head of dill or 1 t dill weed and 1 t dill seed.

  3. Combine remaining ingredients and bring to boiling.

  4. Pour boiling hot over beans leaving ¼ inch head space.

  5. Adjust caps.

  6. Process pints and quarts 10 minutes in boiling water bath.

  7. Yield 4 pints. Allow 2 weeks for flavor to develop.
