Crock Pot Lentils With Ham and Rosemary

Ingredients

  • 2 medium onions, chopped
  • 2 cups cooked ham, diced
  • 1 cup carrot, diced
  • 1 cup celery, chopped
  • 2 garlic cloves, chopped
  • 3/4 teaspoon dried rosemary, crushed
  • 3/4 teaspoon rubbed sage
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 lb dried brown lentils, picked over and rinsed
  • 1 (14 1/2 ounce) can beef broth
  • 5 cups water (or as needed to cover everything by 3 inches)

Directions

  1. Combine all the ingredients in crock pot.

  2. Cover and cook on HIGH until lentils are tender, 2 1/2 to 3 hours.
  3. Add boiling water if you want soupier lentils.
  4. Discard bay leaf before serving.
