Butternut Hash Browns

  • 1 heaping c shredded butternut squash
  • 2 TBSP chopped onion
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • dash ground cumin
  • dash salt
  • dash pepper


  1. Spread the shredded squash out between 2 layers of paper towels – press down to absorb as much moisture from squash as possible

  2. toss squash shreds with onion, onion powder, garlic powder, cumin, salt and pepper

  3. bring a small to med pan sprayed with nonstick spray to high heat

  4. add mixture to pan and cook 2 minutes

  5. flip shreds with spatula and cook 2 min or so

  6. season to taste with salt and pepper
