Chicken Pot Pie

Ingredients

  • 1 package pie crusts
  • 1/3 cup butter
  • 1/3 cup flour
  • 1/3 cup onions, chopped
  • 1 1/2 cups chicken broth
  • 2/3 cup milk
  • 3 cups chicken, cooked (grilled/boiled) and chopped
  • 2 cups frozen mixed veg

Directions

  1. Heat oven to 425

  2. Prepare pie crusts as directed on package for two crust pie using 9" pie pan

  3. Melt butter over medium heat

  4. Add onion and cook for 2 minutes

  5. Add flour and stir until well blended

  6. Stir in broth and milk

  7. Stir until bubbly and thickened

  8. Add chicken and vegetables and mix well

  9. Remove from heat

  10. Spoon mixture into crust-lined pan

  11. Top with 2nd crust

  12. Bake 30-35 minutes and let stand for 5 minutes before serving
