Creamy Lime Dressing

Ingredients

  • 1 package firm tofu -- (16-ounce) drained
  • 1/2 cup chopped fresh parsley*
  • 1/2 cup fresh lime juice
  • 1/2 cup olive oil
  • 1/4 cup tahini
  • 2 tablespoons lite soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Directions

  1. Process all ingredients in a blender or food processor until smooth, stopping to scrape down sides. Chill until ready to serve.

  2. *1/2 cup chopped fresh basil may be substituted.

  3. Note: Tofu is made from soybeans, making it an excellent source of protein and cancer-fighting antioxidants. Look for brands fortified with calcium.

  4. Yield: Makes about 2 1/2 cups
