Lime-Chive Butter Log

Ingredients

  • 1 cup lightly salted or sweet butter, softened
  • 7 tablespoons snipped fresh chives
  • 2 tablespoons frozen lime juice concentrate, thawed
  • 1 tablespoon chopped fresh thyme or 1/2 teaspoon ground thyme

Directions

  1. When the butter has reached room temperature, beat all the ingredients together in a small bowl.

  2. Transfer the mixture in the shape of a 12 inch log onto a piece of freezer paper or plastic wrap and roll up, twisting the ends of the paper to seal.

  3. Refrigerate until firm or freeze.

  4. Each log yields about a dozen, 1 teaspoon pats of butter.

  5. Use to saute veal or pork chops and drizzle over seafood or fish.
