Moroccan Carrot Sald

  • 1/2 cup currants or raisin
  • 4 seedless oranges, peeled and sliced
  • 1 medium onion, finely chopped (red?)
  • 3 Tbs walnuts, finely chopped
  • 1/4 tsp dried red pepper or paprika or cayenne
  • 3 Tbs olive oil
  • juice of 1 lemon
  • salt & pepper


  1. Measure the currants into a small bowl and cover them with warm water. Leave them to soak for 10 minutes.

  2. Peel and thinly slice the oranges. Mix these and all the remaining ingredients together in a large salad bowl and toss gently together.

  3. Drain the currents and add them to the salad. Stir well and chill the salad for at least 30 minutes before serving.
