(from cokerlj’s recipe box)

These are really good and look like you did a lot of work…people are usually surprised that this is all there is to the recipe.

Ingredients

  • 3 sticks margarine
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 cups pecans chopped
  • 1 box Graham crackers

Directions

  1. Heat oven to 350 degrees.

  2. Arrange graham crackers on 2 jelly roll pans, placing as close together as possible. Go ahead and use the broken ones too.

  3. Bring margarine and sugar to a boil; boil about 2 minutes until it becomes bubbly and foamy.

  4. Remove from flame, stir in pecans and vanilla.

  5. Pour hot sauce over graham crackers as evenly as possible, the “sauce” is pretty thick, you have to use a metal spatula to spread because the rubber kinds are not stiff enough. Don’t worry, the mixture will spread as it cooks further in the oven.

  6. Bake at 350 degrees for 8 to 12 minutes, watch so it doesn’t get burned.

  7. Immediately lift up with spatula onto waxed paper on counter.

  8. Cool slightly and remove to dish before completely cold as it will stick to the paper.

  9. TIP: You will want to break or cut into squares or chunks, so don’t worry if you break some during the process of moving them from one surface to another.
