Country Ground Beef Casserole

This was my mothers favorite dish to take to a covered dish affair. It is a great all in one meal, perfect for moms that have to serve dinner in shifts and freezes well. I like to serve with a loaf of buttered french bread.

Ingredients

  • 1 1/12 pound ground beef
  • 1 onion chopped
  • 1/4 bell pepper chopped (very optional)
  • 1/4 clove garlic finely minced or garlic salt
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1 jar pimentos (optional)
  • 8 ounce macaroni cooked
  • 1 cup sour cream
  • 1 package frozen mixed vegetables, par boiled

Directions

  1. Brown beef, onion and bell pepper (if used). Drain.

  2. Add remainder of ingredients.

  3. TIP: I par cook the frozen vegetables in the microwave in the same casserole dish I will use to build and bake my completed meal in.

  4. Bake, covered, at 350 degrees until bubbles and heated through.

  5. Top with grated cheese…5 more minutes in oven uncovered.
