Meatball Strouganoff

Great “company” dish! My family likes a lot of the sauce to use over our rice, so I will triple the recipe for sauce or gravy (amounts are not tripled here).
Serve over rice pilaf, or plain rice. Serve with cooked frozen green peas.

Ingredients

  • 1 cup corn chips ("Fritos") crushed
  • 1 cup milk
  • 1 clove garlic minced
  • 3 tablespoons fresh parsley finely chopped
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 pounds ground beef
  • 3 tablespoons margarine
  • 1 cup onion minced
  • 2 tablespoons flour
  • 10 1/2 ounce can beef broth
  • 1/2 can water
  • 1 teaspoon Worcestershire sauce
  • 1 cup sour cream
  • 1 teaspoon paprika

Directions

  1. Combine corn chips, milk, garlic, parsley, salt, pepper…add to beef.

  2. Make small balls, bake at 375 degrees on cookie sheet for 20 minutes turning over once to brown evenly.

  3. Melt margarine in sauce pan with onion, saute until tender. Blend in flour, add broth, water and Worcestershire. Cook until bubbles.

  4. Reduce heat. Blend in sour cream.

  5. Add cooked meatballs and paprika. Bring back to a slow simmer & serve.
