Pineapple Upside Down Cake

This is the way my mother always made it and the way my husband loves it.

Ingredients

  • 1 box yellow cake mix (ingredients called for on box)
  • 1 #2 (large) can pineapple slices or large can crushed pineapple, drained, reserve juice
  • 1 cup brown sugar
  • 1 stick margarine
  • maraschino cherries (optional)

Directions

  1. Melt 1 stick margarine in bottom of 13×9×2 inch pan.

  2. Sprinkle brown sugar over melted butter (the 1 cup measurement is approximate)

  3. Arrange pineapple slices and cherries; or crushed pineapple in butter and brown sugar in the pan.

  4. Mix yellow cake mix according to directions. You can use some of the pineapple juice drained off the pineapple as part of the liquid needed in the cake mix.

  5. Pour carefully over pineapple, butter and brown sugar in bottom of pan.

  6. Bake 350 degrees until done.

  7. Turn out immediately, do not cool in pan, be careful as the juices/caramel will be very hot.
