Cake in a Coffee Mug

This makes for a great gift. You can use any cake mix and instant pudding combo you can think of…chocolate cake/chocolate pudding; yellow cake/vanilla pudding; spice cake/vanilla pudding; lemon cake/lemon pudding; carrot cake/vanilla pudding, etc.
You could add powdered egg whites to the cake mix and adjust liquid to compensate as per directions on powdered whites.

Ingredients

  • 12 ounce coffee mug
  • vegetable spray (Pam)
  • 1 box cake mix
  • 1 4 ounce box instant pudding
  • 1 egg white
  • 1 tablespoon oil
  • 1 tablespoon water
  • Frosting/Icing Glaze/Chocolate Chips/Powdered Sugar...etc.

Directions

  1. Mix the box of cake mix and the box of instant pudding together.

  2. Divide the mixture up into 8 or 9 1/2 cup portions and place in plastic baggies.

  3. Settle mix down into one corner and tie with a twist-tie. Mark this “cake mix”.

  4. Place frosting mix of choice in an additional baggie and tie that up with a twist-tie. Mark it “glaze mix”.

  5. Place both in the coffee cup and tie up with tulle, cellophane, etc., and include a recipe card tucked into the cup that reads: Generously spray cup with vegetable spray. Empty contents of cake mix bag into cup and add 1 egg white, 1 tablespoon oil and 1 tablespoon water. Mix well for 15 seconds and then bake for 2 minutes on high in microwave. While cake is cooking, prepare desired frosting and top completed cake.

  6. FROSTING OR GLAZE SUGGESTIONS: 1/3 cup powdered sugar; 1 1/2 teaspoon dry flavoring (such as powdered lemonade mix, powdered orange breakfast drink, cocoa powder, vanilla powder, etc.

  7. Select the flavoring appropriate for the cake you are making. Place the glaze mix in a separate plastic bag and mark it glaze mix. While cake is cooking, add 1 1/2 teaspoon water to baggie and squish around until well combined. Snip end and push/squirt icing onto finished cake in a cup.

  8. Enjoy while warm.

  9. You can just put chocolate chips on top of warm cake, let them melt and spread around.

  10. You can also use Jiffy brand frosting mix and putting 1 tablespoon of the Jiffy frosting mix in a bag and then supplying instructions to add 1/2 teaspoon hot water to it.

  11. You can also get a “mocha-chino” flavor by using instant coffee in the cake mix.

  12. You can add 1/8 teaspoon cinnamon.

  13. You can top with ice cream.

  14. Possibilities are endless….
