Earthquake Cake or Upside Down German Chocolate Cake

This cake is really delicious.
I have also heard it called a Upside Down German Chocolate Cake.

Ingredients

  • 1 box German chocolate cake mix or Swiss chocolate
  • 8 ounce cream cheese
  • 1 stick margarine
  • 2 cups powdered sugar (approximate)
  • 1/4 cup milk (approximate)
  • 1 small can angel flake coconut (about 1 cup)
  • 1 cup pecans chopped

Directions

  1. Spray 13×9×2 inch pan with “Bakers Secret” or grease and flour pan.

  2. Spread coconut and pecans in bottom of pan.

  3. Mix either a German chocolate cake mix or a Swiss chocolate cake mix according to package directions.

  4. Pour prepared cake mix over pecans and coconut in pan.

  5. Combine cream cheese, margarine, powdered sugar (use anywhere from 2 cups to a whole box of powdered sugar).

  6. Add milk slowly, only adding enough milk to make the cream cheese and sugar mixture to where you can pour it, sort of like a thick gravy.

  7. Drizzle over unbaked cake mix in pan.

  8. Bake at 350 degrees until done…around 30 minutes to 1 hour, or until cake pulls slightly away from sides of pan.

  9. Cool and serve in pan.
