Banana Pudding Shortcake

Ingredients

  • 1 yellow cake mix (ingredients called for on box)
  • 2 boxes instant vanilla pudding
  • lemon juice
  • 3 bananas
  • Ingredients for "Seven Minute Frosting"

Directions

  1. Mix and bake your favorite yellow cake mix according to package directions in a 13×9×2 inch pan.

  2. Cool.

  3. Carefully slice the cake into two large flat layers.

  4. Spread a layer of vanilla pudding on the bottom layer of cake.

  5. Slice bananas into a bowl and sprinkle with lemon juice to keep the bananas from turning brown. Toss lightly, drain any excess lemon juice.

  6. Place a layer of the sliced bananas on the pudding.

  7. Cover bananas with additional pudding.

  8. Place the second/top layer of cake on top of this.

  9. Ice with your favorite “Seven Minute Frosting”…I have a recipe for that in here.

  10. You will need to store this in the fridge.
