Angel Food Waldorf

This dessert is very popular at Neiman Marcus…they won’t give out the recipe…but after experimenting, the home economists at Lone Star Gas Company where I worked in the 1970’s came up with this very good copy!!

Ingredients

  • 1 box Angel Food Cake Mix, prepared as directed.
  • -
  • COCOA FLUFF TOPPING:
  • 3 cups whipping cream chilled
  • 1 1/2 cups confectioners sugar sifted
  • 3/4 cup cocoa
  • 1/4 teaspoon salt
  • 2/3 cup almonds shaved, toasted

Directions

  1. Prepare Angel Food Cake. Use a packaged mix if you want or make your own.

  2. Cool, slice horizontally to make a double layer cake.

  3. COCOA FLUFF TOPPING: Mix in chilled bowl, then beat until stiff all ingredients for topping except almonds.

  4. Reserve half of the topping and into this reserved half, fold in 1/3 cup cut up toasted almonds. Use this to ice between layers and fill the cake cavity. Replace top of cake and spread remaining cream mixture on top and sides of cake. Sprinkle with 1/3 cup shaved toasted almonds.

  5. Chill until set, 3 hours or more.
