Zucchini linguini with salmon and lemon parsley mint salsa verde

Ingredients

  • 2 x 180 g pieces fish fillet
  • 2 lemons
  • thyme leaves fresh
  • 4 large zucchini, sliced into linguini on a mandolin
  • Handful baby spinach leaves
  • handful pumpkin seeds
  • fresh herbs ( parsely, mint)
  • parsley mint salsa verde
  • 1 bunch parsley
  • 1 bunch mint
  • lemon juice and zest -
  • sea salt and pepper
  • good quality cold pressed olive of flax seed oil

Directions

  1. First make the salsa verde by combining the mint, parsley the juice from half a lemon and just enough olive oil so that the mixture blends together. Season with black pepper and set aside..this is your delicious salsa verde…Season fish with thyme, sea salt, pepper and lemon juice. Steam or pan roast until cooked through. ( about 7 – 8 minutes)

  2. Meanwhile heat another pan with a little olive oil add the zucchini, spinach and plenty of black pepper. Toss through quickly until spinach has wilted and then arrange onto serving plates. Drizzle a little salsa verde through the zucchini, Arrange over the salmon and drizzle over a little salsa verde. Enjoy.
