Brinjal Fry

Ingredients

  • Eggplant cut into bite sized pieces -1
  • Onion chopped -1
  • Chopped garlic -1 tsp
  • Red chillies -4 or 5
  • Turmeric Powder – 1/4 tsp
  • Curry Leaves -a few
  • Salt – to taste
  • Oil – as needed

Directions

  1. Heat oil in a pan and add onions,chillies and curry leaves into it.

  2. Saute for few minutes and add garlic,turmeric powder and salt.

  3. Stir well till the raw smell of onion and turmeric goes off.Finally add the eggplant pieces and saute well.

  4. Simmer for around half an hour stirring continuously.Switch off the heat when its well done.
