Rawa Dosa

Ingredients

  • • Semolina (rawa/suji) 2 cups
  • • Rice flour 1 cup
  • • Asafoetida 1/4 teaspoon
  • • Salt to taste
  • • Ginger,finely chopped 1 inch piece
  • • Green chillies,finely chopped 4
  • • Dry coconut (khopra),grated 1/4
  • • Cashewnuts,crushed 12
  • • Peppercorns,crushed 2 tablespoons
  • • Cumin seeds,crushed 1 teaspoon
  • • Pure ghee 2 tablespoons
  • • Oil to shallow fry

Directions

  1. Blend rawa, rice flour and two and one fourth cups of water to make a thin batter.

  2. Add asafoetida and salt.

  3. Add ginger, green chillies, grated dry coconut and crushed cashewnuts to the batter.

  4. Crush peppercorns and cumin seeds. Heat ghee in a pan and fry peppercorns and cumin seeds lightly.

  5. Add to batter and stir well. Lightly grease a non-stick tawa. Pour a ladle full of batter and spread by swirling the tawa.
  6. Pour a tablespoon of oil around and on dosa and cook till it is crisp and golden in colour. Remove and serve hot.

  7. Similarly make more dosas from the remaining batter.
