Jaldi Tomato Rice

Ingredients

  • Rice (refer notes) – 1 cup
  • Onion – 1 medium, chopped
  • Tomato – 1 medium -big, chopped
  • Scrambled egg – 1 (optional)
  • Turmeric powder – 1/4 tsp
  • Chilli powder – 1 – 1 1/2 tsp
  • Mint & coriander leaves – 1 tbsp each, chopped
  • Salt
  • Oil ( I use sunflower)

Directions

  1. Cook the rice in the normal method.

  2. Make sure that the rice is not over cooked.

  3. Heat oil in a pan & add chopped onion.

  4. Cook it till it becomes soft & starts changing colour.

  5. Add chopped tomato. Cook it till it becomes soft.

  6. Add turmeric & chilli powder. Cook for 1-2 mins, till the raw smell goes.

  7. Add salt & chopped mint & coriander leaves. Mix well.

  8. Add scrambled egg (if you are adding) & stir. Add cooked rice. Give a good mix.

  9. Cover & cook for 2-3 minutes. Remove from fire. Serve hot with any curry, raita, pickle & pappad.

  10. Notes: I normally use Sona Masuri rice. You can use any white rice that you use on a daily basis. However it tastes better with Basmati rice. You can also add garam masala to spice it up.
