Chicken Mushroom Stew

Serves 6 people

Ingredients

  • 5 boneless skinless chicken breasts
  • 2 tablespoons cooking oil
  • 8 ounces fresh mushrooms, sliced
  • 1 medium onion, sliced
  • 3 cups zucchini, diced
  • 1 cup green pepper, diced
  • 4 garlic cloves, minced
  • 15 oz can tomatos, diced
  • 1 can (6 oz) tomato paste
  • 3/4 cup water
  • 2 teaspoons salt
  • 1 teaspoon each dried thyme, oregano, marjoram, and basil

Directions

  1. Place ingredients in slow cooker in the order listed. Cover and cook on low for 6 to 8 hours.

  2. Instead of the individual herbs I used 2 tablespoons of Italian seasoning

  3. I cooked the first hour on high then the remaining 7 hours on low.
