Mexi Salad

Wonderful side dish with any mexican or tex-mex meal!

Ingredients

  • 1 can of black beans (15 ounce)
  • 1 can corn (15 ounce)
  • 2 green onions (chopped)
  • 1 jalapeƱo pepper, seeded and minced
  • 3 plum tomatoes, seeded and chopped
  • 1 avocado, peeled, seeded, and cut into chunks
  • 1/2 cup fresh chopped cilantro
  • 1 T dried basil
  • 2 T lime juice (about the amount of juice from one lime)
  • 1 T olive oil
  • 1 pkg equal
  • Salt and pepper to taste

Directions

  1. Make sure to rinse and drain the beans, if you are using canned beans. I usually rinse the corn too.

  2. In a large bowl, combine the beans, corn, onions, jalapeno, tomatoes, avocado, cilantro, basil, lime juice and olive oil.

  3. Add sugar and salt and pepper to taste. (The sugar will help balance the acidity from the tomatoes and lime juice.)

  4. Chill before serving.
