Grilled Fish with Creamy Lime Sauce

Ingredients

  • 400g green beans, trimmed
  • 270g jar char-grilled capsicum strips, drained
  • Salt and pepper, to taste
  • 4 firm white fish fillets
  • 1 tblsp olive oil
  • Creamy lime sauce
  • 1/4 cup lime juice
  • 1/3 cup light cooking cream
  • 1 tsp caster sugar
  • 2 tsps cornflour
  • 2 tblsps water
  • 25g butter
  • 1/3 cup finely chopped fresh parsley

Directions

  1. Add beans to a saucepan of boiling water. Simmer for 3 minutes. Drain. Return to pan with capsicum. Season. Mix to combine. Cover.

  2. Meanwhile, to make sauce, combine lime juice, cream and sugar in a saucepan. Bring to boil. Simmer for 3 minutes. Add cornflour blended with water. Cook, stirring, until smooth and thickened. Remove from heat. Stir in remaining ingredients. Cover.

  3. Season fish fillets with salt and pepper to taste. Heat olive oil in a non-stick frying pan. Add fish fillets. Cook for 4 minutes on each side, or until cooked through.

  4. Serve fish with creamy sauce and beans.
