Berry and Raw Granola Parfait

Most granola is hardly health food, using grains coated with sweeteners and oil and baked twice. Raw Granola contains no added fat or sweetening and I skip using the oven. Instead, pan-toasting its oats and nuts enhances their flavor at lower heat and more quickly. Served with fruit and yogurt, the result tastes like nutty muesli. Rolled oats labeled “old-fashioned” are thicker and crisper than the regular kind. They give this granola good crunch.
Fast Fact: Besides omega-3s, flax seed is rich in lignans that help prevent cancer.
Quick Tip: To keep dried fruits from sticking to the knife, coat the blade lightly with cooking spray before chopping them.

Ingredients

  • Granola
  • 1/2 cup slivered almonds
  • 1/2 cup walnuts, coarsely chopped
  • 2 cups old-fashioned rolled oats
  • 1/4 cup raw sunflower seeds
  • 2 tablespoons sesame seeds
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground allspice
  • 1/2 cup chopped dates
  • 1/4 cup chopped Turkish apricots
  • 1/4 cup dried blueberries
  • Parfait
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup quartered strawberries
  • 2 cups vanilla low-fat yogurt
  • 4 tablespoons ground flax seed

Directions

  1. For the granola, combine the almonds and walnuts in a medium, cast-iron or other heavy skillet over medium heat until they just being to color, 3 minutes, stirring often with a wooden spatula. Mix in the oats and cook until they color slightly, 2 minutes, stirring frequently. Add the sunflower and sesame seeds, cinnamon and allspice and continue cooking until the mixture is an even beige, 1 minute, stirring constantly. Off the heat, mix in the apricots, dates, and blueberries. Cool the granola to room temperature. Store in sealed container in the refrigerator up to 2 weeks. Makes 4 cups.

  2. Combine the berries in a medium bowl. For each parfait, spoon 3/4 cup of the mixed berries into a parfait glass or dessert bowl. Spoon 1/2 cup yogurt over the fruit. Top with 1/3 cup of the Granola. Sprinkle on 1 tablespoon of the flax seed. Serve immediately.
