Healing Cabbage Soup

Serves 10 people

Ingredients

  • 3 T olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, chopped
  • 2 quarts water (8 cups, may use 2 cups broth)
  • 4 t bullion (or to taste, use less if using broth)
  • 1 t salt
  • 1/2 t pepper
  • 1/2 head cabbage (coursely chopped)
  • healthy dash of cayenne pepper
  • healthy dash of red curry powder
  • 1 can (14-15 oz) tomatoes (try roasted garlic)
  • 1 zucchini, diced
  • 1 can of corn (small)
  • 1 cup of sliced mushrooms (any kind)

Directions

  1. In a large stock pot over medium heat, warm olive oil.

  2. Stir in onion and garlic.

  3. Cook 5 minutes.

  4. Stir in everything but tomatoes.

  5. Simmer 10 minutes.

  6. Add tomatoes.

  7. Simmer 15-30 minutes (or until veggies are cooked to taste)
