Ganache Frosting

Serves 8 people

Ingredients

  • 1 lb fine quality semisweet chocolate
  • 1 c heavy cream
  • 2 T sugar
  • 2 T light corn syrup
  • 1/2 stick (1/4 c) unsalted butter

Directions

  1. Finely chop chocolate.

  2. In a 1 1/2 quart saucepan bring cream, sugar & corn syrup to a boil over moderately low heat.

  3. Whisk until sugar is dissolved.

  4. Remove pan from heat and add chocolate.

  5. Whisk until chocolate is melted.

  6. Cut butter into pieces and add to frosting.

  7. Whisk until smooth.

  8. Transfer frosting to a bowl & cool, stirring occassionally, until spreadable.

  9. Depending on what chocolate was used, the frosting may need to chill to be spreadable.
