Kalamata Olive Hummus

Ingredients

  • 3 T lemon juice (3 lemons)
  • 1/2-2/3 c kalamata olives
  • 1/4 c water
  • 2 garlic cloves, peeled
  • 6 T tahini
  • 1/2 t salt
  • 2 T olive oil
  • 1/4 t cumin
  • dash of cayanne
  • 1 (15 oz) can chick peas, drained and rinsed

Directions

  1. Combine lemon juice & water in small bowl.

  2. In a separate bowl, whisk tahini and olive oil together until smooth.

  3. Process the chick peas, olives, garlic, salt, cumin & cayanne in food processsor until amost fully ground.

  4. Scrape down the bowl with food processor running, stream in lemon & water.

  5. Process for 1 minute.

  6. Scrape down bowl again.

  7. Turn food processor on & stream in tahini & oil mixture & process unitl smooth, about 1 more minute.

  8. Transfer to bowl and cover.

  9. Let sit at least 1 hour.
