Spanikopita

Serves 2 people

Ingredients

  • 4 oz frozen chopped spinach (thawed & drained)
  • 2 oz cream cheese (room temperature)
  • 2 oz feta cheese
  • 1 egg yolk
  • 1/2 t salt
  • 2 T melted butter
  • 6 sheets of frozen phyllo dough (thawed)

Directions

  1. eheat oven to 375.

  2. In bowl combine spinach w/cream cheese & mix until smooth.

  3. Add feta, egg yolk & salt.

  4. Stir until thoroghly combined.

  5. Unroll phyllo dough, place on flat surface & separate out 6 sheets, gently lifting them off the stack of sheets as a single unit.

  6. Lay 1 phyllo sheet out and brush entire surface with butter.

  7. Top w/another layer of phyllo. Repeat for a total of 3 layers of phyllo.

  8. Spoon half of the filling into the center of the phyllo sheets.

  9. Fold the sides of teh phyllo in over the filling, fold the bottom up and the top down to form a rectangle.

  10. Brush w/butter and place fold side down on ungreased baking sheet.

  11. Bake 35-45 minutes.
