Greek Orzo Salad

Cook time: 10 minutes
Serves 8 people

Ingredients

  • 5 c cooked orzo
  • 1 large cucumber (peeled, seeded, diced)
  • 1 medium red onion (diced)
  • 20 kalamata olives (quartered)
  • 1 (14oz) can artichoke hearts (cut into 1/8ths)
  • 1/4 c fresh chopped parsley
  • 1/3 c extra virgin olive oil
  • 1 large lemon, halved
  • 1/2 T salt
  • 1/2 T black pepper
  • 4 oz feta

Directions

  1. In large mixing bowl add orzo, cukes, tomatoes, onion, olives, artichokes & parsley.

  2. Stir.

  3. Pour olive oil into mixture.

  4. Juice entire lemon into bowl.

  5. Add feta.

  6. Stir.

  7. Chill.
