Crock pot risotto

Very easy – make in the morning and then ready for dinner

Serves 4 people

Ingredients

  • In crock pot:
  • 1.5 cups of arborio rice
  • 1 big can of tomatoes (maybe some more - you like tomatoes...)
  • 2 chopped onions
  • 1 chopped red pepper
  • 1 bunch chopped spinach / baby spinach (make it easy)
  • left over wine?
  • some chopped garlic
  • 4 cups of water
  • herbs
  • fake hot dogs/sausage
  • milk
  • parmesean cheese

Directions

  1. saute onions, garlic, peppers, and herbs (basil/parsley/oregano/thyme/rosemary/etc)

  2. pour into crock pot with rice, water, tomatoes, spinach, wine, water, and chopped up fake sausage

  3. stir once

  4. cover and leave either on low for 6-10 hours or on high for 2-6 hours

  5. take pot out of crock pot. add milk and stir.

  6. serve
