Mexican Black Bean Salad

Ingredients

  • 2 sweetcorn cobs, kernels sliced off
  • 4 cartons black beans in water, drained and rinsed (or 6-7 cups sprouted black beans, Aduki or mixed sprouts or your choice)
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1-2 green chillies, chopped
  • 1 red onion, chopped
  • Small bunch coriander, chopped
  • Dress with:
  • Juice of 2 limes
  • 1 teaspoon sea salt
  • Few grinds black pepper, to taste
  • Tabasco sauce (optional)

Directions

  1. Chop all main ingredients and add to a large salad bowl.

  2. Squeeze over the limes and add the sea salt and pepper, and stir in.

  3. I suggest adding Tabasco sauce to each individual serving (to taste).

  4. This is perfect in a lunch box!! Will keep in fridge for 2-3 days.
