Chocolate Cup Cakes

Ingredients

  • 2 c. sugar (1 c.)
  • 3/4 c. (6 T.) oleo? - Put into bowl & add 1 1/2 c. (3/4 c.) boiling water
  • SIFT INTO ABOVE
  • 2 c. flour (1 c.)
  • 2 tsp. soda (1 tsp.)
  • 1/2 c. cocoa (1/4 c.)
  • 1/2 tsp. salt (1/4 tsp.)
  • MIX WELL AND ADD
  • 2 eggs (1 egg)
  • 1 tsp. vanilla (1/2 tsp.)

Directions

  1. Bake @ 350 for 17 minutes – makes 2 dozen

  2. *Don’t over-bake, cupcakes will continue to bake after removed from oven

  3. When testing doneness, toothpick can be slightly moist

  4. *Ice with creamy vanilla or whipped cream cheese
