Cranberry-Cashew Wild Rice Pilaf

Ingredients

  • 1.5 C wild rice (soaked for 24-48 hours)
  • 1 C dried cranberries (or golden raisins)
  • 1 C cashews
  • 1/4 C chopped fresh cilantro
  • 1 t salt (if not already on cashews)

Directions

  1. ak rice for at least 1 day, preferably 2. Change water in middle of soaking.

  2. Toss all ingredients together and enjoy.

  3. Will keep for 2-3 days in fridge.
