Sausage, Lentil, and Barley Soup

Ingredients

  • 1 lb Polish sausage (kielbasa)
  • 3/4 cup onion , chopped
  • 1 clove garlic , minced
  • 2 (16 ounce) cans stewed tomatoes
  • 4 cups beef broth (I use beef bouillon and water)
  • 1/4 cup uncooked barley (not quick cooking kind)
  • 1/2 cup uncooked lentils
  • 1/2 teaspoon salt
  • 1 teaspoon dried basil
  • 2 cups diced potatoes
  • 1 cup sliced carrot

Directions

  1. In large pot, cook sausage and onions until onions are soft.

  2. Add all other ingredients and bring to a boil.

  3. Reduce heat and simmer soup, covered, about an hour or until potatoes and carrots are tender.
