Caramel Apple Bars with Dates and Walnuts

Ingredients

  • INGREDIENTS
  • 1 cup all-purpose flour
  • 1 cup whole wheat pastry flour
  • 2 cups old-fashioned rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 3/4 cup Pompeian Extra Light Tasting Olive Oil
  • 2 tsp. vanilla extract
  • 2 Tbsp. water
  • Fruit Filling:
  • 1-1/2 cups apple, peeled and diced
  • 1/2 cup walnuts, chopped
  • 1 cup dates, chopped
  • 1 cup low-fat caramel ice cream topping
  • 3 Tbsp. all-purpose flour

Directions

  1. Preheat oven to 350o F and spray a 9 × 13-inch glass baking dish with cooking spray.

  2. In a large bowl, combine flours, oats, granulated sugar, brown sugar, baking soda, cinnamon, and salt. Make a well in the center. Add the olive oil, vanilla extract, and water. Blend well.

  3. Reserve 1-1/3 cups of crumb mixture in a small bowl. Press the remaining mixture onto the bottom of the prepared pan. Bake crust for 15-17 minutes or until slightly puffed.

  4. While the crust is baking, combine the apples, walnuts, dates, caramel topping, and 3 tablespoons of flour. Stir until well mixed.

  5. Distribute fruit mixture over the prepared crust. Sprinkle reserved crumb topping over fruit mixture and bake for another 25-30 minutes or until lightly browned.

  6. Cool in the pan on a wire rack before cutting. Store in an airtight container.
