Autumn Pumpkin Spice Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 2/3 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 ginger
  • 1/4 teaspoon baking soda
  • 1/2 cup canned pumpkin
  • 1/2 cup melted butter
  • 1/3 cup buttermilk
  • 2 eggs , lightly beaten

Directions

  1. Heat the oven to 400°F.

  2. Grease 12 muffin tins or lined cups.

  3. In a large bowl: Combine all ingredients except for pumpkin, butter, buttermilk, and eggs.

  4. In separate bowl, combine the rest of ingredients.

  5. Mix into the flour mixture until moistened.

  6. Spoon the batter into the cups.

  7. Bake about 20 minutes or until a toothpick comes out clean.

  8. Let cool before removing from the tins.
