Slow Cooker Chicken Stew

Ingredients

  • 2 lbs skinless, boneless chicken breast or thighs
  • 1/4 cup flour
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 cup chicken broth
  • 1 tsp Worcestershire sauce
  • 1 clove minced garlic
  • 1 bay leaf
  • 1 tsp paprika
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 15 sliced mushrooms, about 2 cups
  • 8 ounce can of corn kernals, 1 1/2 can
  • 1 tbsp corn starch

Directions

  1. Place chicken in slow cooker

  2. Mix flour, salt and pepper and poor over chicken

  3. Stir to coat chicken with flour mixture.

  4. Add remaining ingredients, except for the corn starch.

  5. Stir all ingredients and mix well.

  6. Cover and cook in crock pot on low for 10-12 hours

  7. During last hour of cooking, mix corn starch in stew to thicken juices if ou wish.

  8. Stir stew thoroughly before serving.
